I usually start out with a charcuterie board and maybe follow it up with an appetizer like shrimp Lejon.
In years past I have featured either a roast goose or standing rib roast (with horseradish cream sauce) as the main dish. The rib roast always comes out fantastic, but one upshot of the roast goose is all of the leftover fat that you can use throughout the coming year for making delicious roasted potatoes, etc.
Sides are generally some combo of potatoes au gratin and various other vegetables (carrots, parsnip puree, green beans, a blend of root vegetables, etc.).
Plenty of wine. Dessert is generally one pie option and one cake option.

I like the traditional Christmas ham dinner- mashed potatoes, green beans, rolls, etc. I know a lot of people make manicotti. I wouldn't be mad about good Indian food or Lebanese. Most likely I'm going to make tamales because I already have them and a big ham would probably go to waste.
My daughter looks forward to cinnamon rolls Christmas morning. Other than that likely to have easy snack stuff like meat/cheese/cracker, maybe veggies w/dip and some fruit.

My mom makes this fantastic hashbrown casserole on Christmas morning each year, and these cinnamon rolls she makes in a bundt pan, sticky with cinnamon and sugar and chopped pecans or some other kind of nut. I don't have the recipe but.. I should get it.
The hashbrown casserole has diced potatoes, shredded cheddar cheese, sour cream, chopped bacon, green onions and... some other stuff, with crushed up corn flakes on top. lol no joke. It's actually really good
edit: oh and also my mommy makes a pumpkin bread log with cream cheese filling:

I gotta snatch up her recipes someday soon as she and I are the only people in the family who give a fug about cooking, and I need to carry the torch when it passes.

Christmas Eve we always do tenderloin and a brown sugar ham. My mother makes these cheese potatoes that are insane. Then we usually do a cranberry based salad and fresh bread. I'll usually make the appetizers which are cheesy spinach and artichoke dip in filo dough cups and bacon and cheese cracker bites made in the oven.
Then we top it off with warmed Swedish Glogg.
