If the pan and butter are hot enough but not too hot to burn the butter, it will add to the crust when basting. Fat is also a vehicle for flavor which is why people often add sprigs of fresh herbs and garlic to the pan while doing it.
I’m talking about spooning the butter over while the steak is cooking but using a melted herb butter when grilling will achieve the same.
