It's Grilling Season Boys. Steak and Chimichurri FTW (pics)

Just made a nice chimichurri for the next few days. Going to cook up these steaks then marinade some skirt steak to cook tomorrow.

Will probably just cook up a little sweet potato and zucchini to go with this.

Salt Brining the steaks right now.

The NY strip will be moreso rare because it is a prim cut.

The two chuckeye center cuts will be medium rare. Sorry boyo.

I just used a little of everything I had so it's a little extra of what a typical chimi I make.

Olive oil
Parsely
Cilantro
A little bit of mint leaves
fresh oregano
Salt, pepper
Chili flakes
red wine vinegar
garlic

All just chopped up finely with my knife. Sometimes I'll use a pestal and mortar too. Agreed about it being the best sauce for steak.

It's not grilling season year round here sadly. Winter ruins that.

Yup. I just put my Skirt streak in the marinating bag. That's why I made the chimichurri. I'm just used a little tonight and will use some for lunch tomorrow.

Yea the fattier cuts are the chuckeyes, which I cooked longer. The NY strip I bought is a prime cut so of course it has amazing marbling. It's perfect on the rarer side of medium rare if you do it right.

By far the best thing about this move to AZ is that it is grilling season year round.

Hard to beat a great gym session, then pool time, followed up with a fat steak on the grill

Yup. Nothing better than all fresh herbs and good quality ingredients chopped up by hand (I like it this way vs. using a processor).

Yea as much as I love IL weather and 4 seasons, sometimes I truly wonder how amazing it would be to have year round grilling and outdoor fire cooking. A little jealous tbh.
