Rate late night, post Ride Dinner/10

I'm cutting

Smoked 9.2-pounds of pork shoulder. 7 hours in the smoker @225F, then another 3 hours in the oven wrapped @225F.

Pulled out at 200F internal temp.

Came out so tinder and juicy AF. Literally falls apart in my hands.

Drizzled with some no-carb chili lime sauce, and washed down with a cold Dr.Pepper Zero.

Mirin brah.
The closer we approach the uncertainty of life's ending the more we wish to trade all of the things we have acquired in exchange for all of the things we have lost: wealth for youth, knowledge for fresh curiosity, resignation for hope. We'd trade our wisdom for new experiences, but it is wisdom that will teach us that at the end of the road the only new experience is death.

I did! Slow cooked, then rested for 30min, most of the juices retained IN the meat. Literally each bite bursting with juices, like a thirsty sloot.
