I buy 2 inch cut NY strips from a butcher. Really not a fan of steak bought in a grocery store, because they're mostly cut thin. If I buy grocery store steak, I'll usually pick up skirt steak or a tomahawk, as tomahawks are always cut thick. (Super Ded fkn Srs)

If you go to Costco just get the whole strip loin, it’s like 13 pounds for $170.
Slice it into around 12-14 steaks and vacuum seal them.

Never understood why people go to Costco/Sam's Club for buying meats. It's way cheaper to go to a local chain grocery store. Never found a good deal on meats at Costco.

Steak should be ribeye or fillet mignon or porterhouse/t-bone.
Thickness should be 1.5 inch or 2 inch. 1 inch is possible but tricky. You will have to sear hard and fast and take off quick.
Prime or sometimes choice might be ok especially for tenderloin (fillet mignon)
Cheaper cuts like “select” are unacceptable. If it isn’t labeled, it’s a really bad cheap cut. Look for marbeling.
No freezing!
No grass fed if you’re grilling for guests. Grass fed ok if you’re grilling for yourself. Grass fed is leaner but tastes like **** compared to grain fed.
Take meat out 2 hours before grilling.
Salt, pepper, garlic, rosemary. Nothing else, no oils etc.
Preferably Grill on lump charcoal. to internal 120f, use a thermometer.
Cover the grill but leave full open vents on top and bottom.
If require more outside burn can go uncovered for a minute on each side as needs.
If thick strip of fat on side of cut do NOT cut that off. Sear that by placing steak on its side on the grill for a minute, and eat the fat you pussy!
Can place the steak right on the coals! For caveman style smoky steak. Only do that with ribeye. Steak might be tougher, but more flavorful. Do this only with lump charcoal.
Skillet and gas require slightly different tricks.
