3000 calories of carb heavy diet makes me gain weight like crazy. This is, of course, controlling for water retention from carb heavy diet.
If it's all about calories in and calories out. How do you explain this phenomenon?

I was a weight loss consultant for over 7 years.
one constant fact that clients had was the inability to count. Its like weighing something on a postal scale is and reading a food label is the most difficult thing in the world.

Answer to your riddle: You burned more Calories / exercised more when you ate the beef.
The carb heavy diet made you lazy and exert yourself less.
Last thought I guess is carb heavy diets will cause you to hold more water weight.

but how do you calculate net calories?
some foods take more energy than others in the conversion....the calorie scale we use for food is based on setting it on fire...biology is not the same.
