Pinging Misc Chefs. Measley Reps

Sooooo, I pounded some boneless, skinless, chicken breasts to abouty 1/4 of an inch. Marinated for about 5 hours in a Middle Eastern marinade which included sour cream, garlic, onions, ect.

Grilled 'em on my "tru infrared" grill...and not a single bit of the marinade flavor came through.

you need a binder like oil or eggs. other than that i dont know. sour cream probably wont penetrate the meat. dont use that.if you do poke some holes with a fork. if you insist on using SC make the garlic and onions into a paste using oil and then combine them all. that will at least work a little better

Adding salt would help that type of marinade hold more flavor into your meat. I think baking instead of grilling would have been a better choice for keeping the flavor as well. Rubs are better options for grilling.

I used EVOO and lemon juice with chopped garlic.

I used plenty of kosher salt and even THAT barely came through.


You're probably right on the oven, but I just bought this grill and I neeed to find a reason to keep it...! LOL

Sour Cream. honestly i dont what to tell you. also if you wanted greek style you should of used greek yogurt. Hope you figure it out man

you best be trollin, boy. I use a generous amount of salt when I cook thick chicken breasts and while not salty, I can definitely taste the difference in flavor and texture.

Personally I don't know I've rarely heard of people marinating for 5 hours. Most often I hear of people marinating food for 12 or so, at least.

I personally would have used greek yoghurt and ghee for a marinade. I also don't think 5 hours is necessary. You could get away with less.


Most marinades for chicken won't really penetrate the meat past a few hours and don't really contribute to making more tender chicken. You can even go overboard with it and make the chicken unpleasant if left too long.


Beef and lamb do well with longer marinades, but chicken is a different story.
