1 stalk celery chopped fine
1 stick butter, real butter (bacon grease better)
1 onion chopped cubed
2 cloves garlic choppped fine
2 jalapeño peppers sliced
2 tablespoons cayenne flakes
1 lb Camellia red beans
1 lbs smoked sausage
1 lb andouille sausage
Tony’s chacheries to taste
4 quarts water
Add all ingredients on medium high until it comes to a boil then set on medium low until beans are tender. Takes about 3 hours.

Cornbread and mustard greens for maximum hhhnnnggggg.
