Going shopping tomorrow for schnitzel now . One of my favourite meals , especially with mashed potatoes.

How do you cook yours for best results ?

Pork tenderloin.
Cut about a 2 inch thick piece, place between 2 sheets of plastic wrap and pound it flat.
Set up a plate with flour, another with eggs wash, another with bread crumbs. Add salt and pepper to all, onion and garlic powder to bread crumbs.
Dredge pork thru each one, place on parchment paper. Get 2nd piece of parchment paper, place on top of pork and press down. Helps keep the bread crumbs on.
Then I fry it in a mixture of butter and olive oil. Long enough to brown each side. Won’t take more than 3 mins a side. As long as the oil is hot.
Place on paper towels to remove excess oil.

Serve with lemon wedge.
