Not sure what your criteria for a meal prep meal is. I make this and freeze servings lol so it is for me
Measuring stuff might be an effort lol. I don’t mind it/ I hate chopping shit and stuff like that. Throwing things in a crockpot is easy

Slow cooker chicken and stuffing 2.5 lbs chicken breast (I cut the bigger breasts in 3 and the smaller breast in half)Place them in crock pot and season the way you like (I use salt, pepper, poultry seasoning and parsley flakes)Pour in 1 cup of chicken broth
For the stuffing:Grab a bowl and mix 2 boxes of dry stuffing mix with 2 cans of any type of cream soup (I used cream of mushroom)Take your stuffing mix and cover the chicken. Top that with a few slices of butter
Cook on high for 3 hrs or low for 6 hrs
