You had a pickled egg? For real? Do they still have jars of them you can grab one?
I haven’t had one in like 30 years or so- I think they always sounded good in theory but you get one and it’s kind of good kind of disgusting (the cottage cheese effect)
Anyways - what yall think about this

Never had one. I love pickles, too. We make them from cucumbers we grow. I've seen pickled eggs for purchase in a few places, but they were always $20 or something for a quart jar and I've always been too cheap. I've thought more than once I need to make my own.

Oh damn . Yeah here in Maine if you’re lucky you’ll see them sitting on a counter and you just buy one for like .79 cents or something lol - I don’t think I’ve seen them in a while though. Now I don’t even know

How much salt do you use to make pickles? I limit my intake sadly because of the sodium but I swear pickles shouldn’t need that much to be tasty. I do like vinegar and cucumber but it’s not the same

Eggs are great

Never had a pickled egg, but hard boiled ones with lime and salt are pretty good, that's the closest I've come

There's quite a bit in the brine. I'll get a number tomorrow. The pickles are probably about as salty as the brine after a couple years.

I think you can cut salt if you want when making pickles. My memory is that you can't alter the vinegar because the acidity is what makes it safe for water bath canning, but salt can be changed. I think botulism is the risk if acidity is too low and in that case you have to pressure can fit the higher heat.
