Choice one: get down to 185 pounds many times throughout your life, but always bounce back to 300 pounds

Choice two: get down to 200 pounds, and never go above 210, but you can never get under 200 pounds as long as you live, but the bonus is you never get back to 300

This. I'm 5-11" and was 195" after a lean bulk and doing fine. Could have put on a few more pounds and stayed there with no issue. Instead, I got injured and cut back down to 185 lb, which is where I'm going to stay, but 15-25 lb heavier would be doable indefinitely.

6'3" and 200 lbs is borderline overweight. Whether the extra weight is fat or muscle it's definitely not deathly skinny.
