Banana oat muffins...been a while since I've done any baking

There's only 4 left because I gave half away to my neighbors.



This is a quick and easy recipe if you want to attempt.

Banana oat muffins

2 large bananas mashed
2 eggs
½ cup oil
1 tsp vanilla
Splash of oj
½ cup brown sugar
½ cup sugar
½ cup of quick oats
2 cups jiffy mix (works perfect when you don't have flour)

Mix the above and fill your muffin tins.  This makes 12 muffins
Bake on 350 for 18 min.  Cool and serve

I would make it in two batches and use soybean oil for the neighbor ones and avocado oil for the personal consumption ones.
