I think the majority of barbecue/grilling enthusiasts are ignorant (or in denial) when it comes to cleaning grill grates. They don't completely clean them, but just burn off and brush off the gunk and food residue.

They claim this is "seasoning" the grates, but to me it is obviously not so. For example, when you PROPERLY season a cast iron pan by heating a thin layer of oil on it, the oil will polymerize and basically become the outer layer of the pan. When that process is finished, brushing your finger against the seasoned layer will not leave any residue on your finger.

Now try brushing your finger on someone's grill grates. It will leave your skin pitch black, powdery, and/or oily. It's just a layer of burnt oils and food, not proper seasoning. This is just adding rancid oil and char dust to your food, which is seen as pitch black grill marks on food. It isn't supposed to be pitch black. Proper maillard on meat will be a deep, dark brown. Black just means burn/char.

Grill grates should be washed down and scrubbed clean. Despite what most people think, this does not strip seasoning from metal. Polymerization creates a super strong bond to your metal and it simply can't just be washed away.

I meticulously clean my cast iron cookware and grill grates. I always reseason them properly by rubbing on a thin layer of oil and baking them in the oven to prepare them for the next round of cooking. You will only taste the smokey infusion of my charcoals, not the burnt residue of last night's grilling session.
