Mexican here. Beef, chicken, pork and goat. So many good dishes for each and some plates can have different meats substituted. I don't think pork is necessarily coveted more than the rest, but to make it taste good it does require more effort and hence why it's scarce and appreciated when it's done right.

Some people call our food poverty food, but to me it's blows away most other cuisines when done right.
