We had leftover lamb saag tonight (homemade) + cauliflower, okra, and Japanese sweet potato.

Tomorrow night probably some trout and zucchini. And, of course, potato. Always potato.

Had 2 burritos for dinner

Fried up some ground beef with drippings from the brisket I smoked a few days back, refried beans with chipotle, shredded iceberg with a drizzle of avocado ranch, sliced and salted avocado, queso cheese, and a sprinkle of fizzled onions.
Corn chips with a tomatillo based salsa on the side.

I made basmati rice with lamb tonight for the husband with side of yogurt sauce.

Since he ate 2 plates, I'm assuming it was good.

We made a "beef taco casserole" (Whole 30 style), and served it with lots of cilantro and avocado.

I have olive chile bread proofing in the fridge, will bake it tomorrow morning and eat it with a tuna/herb dip I'm addicted to at the moment.

Tomorrow night will be cast iron chicken in a mushroom cream sauce, served with broccoli and rice.

Now that Whole Foods delivery is back in business, I'm cooking more - was a period here in NYC where I was binging badly on junk food and take out in general.

I was watching Good Eats and he made I wanna say like some sort of pickled mushrooms I'm gonna try out.

Gotta keep wolfing down mushrooms, they're very healthy and I really feel a difference when I eat a ton of them.

Are you watching the classic Good Eats or his rebooted one? I have made the caramelized onion dip from the original series so many times - it's an absolute hit at parties, dead serious. Alton has quite a few go-tos, really.

Today I made stir fry, 1 lb chicken diced and seasoned with barbecue dry rub then 1 green pepper, 1 red pepper, and a cup of mushrooms with a lot of oil and garlic. It's really good and is mega high quantity for being sub 1k calories

I think it was the rebooted one.

I've gotten a few recipes off his show, especially his tuna salad (I also use it for chicken salad).

Olive Bread

Ingredients:

400g bread flour (high protein is great) - I do 150g whole wheat, 250g of regular
200g of roughly chopped olives (I love Divina olives if you can get them - Goya are good too) - I do a mix of green and black, make sure you drain them pretty well in a sieve. When I chop them I also allow any excess liquid to pool off to the side of my cutting board.
3g of instant or active dry yeast
300g of cool water

This is the basic part. These days I add 0.5tsp garlic powder; 1tsp chili flakes; a shake of oregano and thyme as well.

Method:

Mix the dry ingredients thoroughly in a large bowl, add the water. Using your hands, a spatula, a wooden spoon...thoroughly mix - it should take at least 30 seconds. No dry flour spots etc. Cover with cling film, let rise on the counter for 12-18 hours. I try to get the 18 hours done.

In the morning, turn the dough out onto a floured surface. Turn it a few times to create tension, and shape it. Cover with a tea towel and let it rise again for around 2 hours. In the last 30 minutes of the 2 hours preheat your oven with a dutch oven (there are substitutes - let me know if you don't have one) inside, at 450F. Once the 30 minutes are over, turn the dough out face down into the pot, cover, bake for 30 minutes. After 30 minutes, take the lid off and bake for another 20 minutes - the crust should be a nice chestnut brown color.

The flip means the seam underneath will split as the dough rises in the oven.

Tuna Dip

I do this by eye - it's a play on a Mediterranean dip I had. I'll put say, 3 cans of quality tuna in a bowl and flake them. I add salt, pepper, garlic powder, lots of tomato paste, olive oil, fresh chopped tomatoes. Stir. Lots of chopped fresh basil and mint, stir. It should be 'spreadable'. If I want it more savory than this, I finely chop some onions, and capers, and mix them in as well.

I put copious amounts of this on the bread above after it is cooled.

I used to buy some french bread and make a slice or two of garlic bread a day really just as a means of getting more olive oil (I'd drench them in oil).

Need to get on that Aristotlean time though.

I've been having the idea of wanting to start making my own beer too, but it was on hold cause I noticed beer would wreck my stomach.

Now that I've learned that there are certain types of beers I could drink with no problem this may be the year I start brewing my own beer.

Just the thought of watching football in the winter with some chili and beer that I made sounds so HNNGGGG

This sounds really good. I can't afford to use my flour on a snack for me right now since we've just gone into lockdown so I imagine next time I'm at the shop it will be fking gone again so gotta ration lmao. That being said I will try it very soon. I had to Google dutch oven, guess it's not really a phrase we use here, but it turns out I do have one so that's all good

We have been in lockdown since March - yeast and flour were the first things to go, after toilet paper. I got so irked at this that I ordered 25lb bags of flour (one for whole wheat and one normal) from a farm relatively near us. This baking bug really bit me - I have a serious bread knife, bakers lame, a linen couche...our NYC kitchen is being overrun by my habit, hah. Luckily the wife loves the bread, too.

Shouldn't post about food this late - stomach is growling,

I didn't get to bake as much as I wanted last time for the same reason, I really should've learned my lesson.

Made tandoori chicken pieces last night, ate them chopped up in burritos with mint yoghurt, mango chutney and mixed leaves.

Going drinking with a friend tonight but since bars are currently extremely lame, we're going to a Vietnamese place for dinner, gonna bring wine to drink.
