Dinner pic / 10

Archery season here started early October. It started at my buddy's location in September, so we started there...before the season kicked off locally I had 2 deer in the freezer so not really anxious.

Got things done last night. Switched things up...hunted from the ground instead of a tree stand. Out of nowhere, large buck comes running toward me. Honestly thought this thing was going to hit me...about 20 yards out it quartered toward me. Not the best shot but...



Hit him up front in the side facing me, exit was way far back. Arrow hit the liver. Very little blood trail but he died ~100 yards from where he was shot.



Wife of the year helped me drag him back. Here he is hanging. Big boy.



Caping him out.



Processing....backstraps were chonk.



Tenderloins out.

Right onto the grill.



Never frozen surf and turf. Less than 24 hours from alive, over 200 lbs of rampage to the plate.

Like really lean beef. The tendies and backstrap have the texture of filet mignon but taste a little different. Deer-ey...the steaks are kind of tough. Ground venison is great in sausage, sauces, hamburgers etc if you have a little fit in there to bind it.

Ground venison is great in chili. I do half ground beef and half venison for the meat. Usually don’t do steaks since they can be over cooked so quickly.

It's really good but it's hard to explain if you've never eaten it. You can make steaks and burgers out of it but if I'm honest those don't taste as good as beef. Where deer meat shines is when you make sausage and jerky out of it. Also you can take the back strap, cut it into thin slices and fry it up like country fried steak and it will be one of the best things you've ever eaten.
