Same reason every corporatized (music, vidya, tv shows) art form goes to **** at some point. Studios are never going to stop production until it starts failing, so they are always destined to fail at some point unless they are just going to halt a successful project that is raking in money (ie Seinfeld).

Because the writers of a successful show are a hot item and will be paid a boatload of cash to write for a new show. From the streamer or network's perspective, if a show blows up in the first two seasons, they can use regular staff writers to keep it going while the talented creators need to develop new shit. Of course, this usually ruins the show but greedy gonna greedy

What? That's the exact opposite of what should be happening.

They make too many seasons stretching out shows to milk as much money as possible. Look at Lost and The Walking Dead. Those shows ran for far too long.

HBO does things right for the most part; a bunch of 1 or 2 season/stand alone shows that kill it:

Band of Brothers
Rome
Generation Kill
True Detective
Chernobyl

And their longer shows generally deserve to be that long given the depth:
The Wire
Sopranos
OZ
Succession

Directors are pussies. They tend to give into to fans a lot and it takes the show in a direction that they never had in mind. And then they have to come up with some bs ending

Most shows get cancelled, so it would be a lot of wasted unpaid effort to start writing out seasons in advance.
