Why does dying in a dream always wake you up?

All the other weird abstract nonsensical af things we dream of without batting an eye, but a completely natural event is the thing that disturbs our sleep.

Maybe because your brain has no idea how to do death? Or maybe because its such a deep seated fear that it automatically snaps you to attention?

Idk I never really feel fear towards death when I'm dying in my dreams, but it always snaps me back to reality without fail

One of your bodies in an alternate place died and your consciousness needs to find another body to reside in so it returns to the default.

Sometimes during a nightmare, I figure out that I'm dreaming so when I get into a perilous situation, I just force myself to wake up. And then I ask myself "why didn't you just wake up earlier, you dumbass."

Hehe, some lucky people actually come back.

Personally, I have never had a dream in which I was dying or died.

I do this too but don't know anyone else who can. I can consciously realize I'm dreaming and wake myself up.

As for jolting awake when you die in a dream, your brain gets stressed out and releases an adrenaline dose. Since you can't sleep and have an adrenaline rush at the same time, it wakes you up.
