What should I meal prep next week? Tired of chicken breasts.

I'm thinking turkey meatballs and zucchini spaghetti, but I've never made either.

Sirloin steaks are my go-to when I’m sick of chicken breasts. Lean, delicious and versatile.

Get some beef shoulder or other stewing beef. Add Pepper (3 cloves)Garlic, peppers(red/green), white onion or shallots, carrots,and thyme. Let marinade overnight. Remove beef from veggies, seasonings, and allow to come up to room temp. Once at room temp get a pot(ceramic if you have it), add oil and get it prime Pamela Anderson hot. Drop the beef into sear. Once it has a nice color and bark on it add your veggies. let them soften and add Tomato paste. After that has incorporated at the stock of your choice about a cup or so, and add salt now. Let cook for about 2 hours, add some red wine if you choose(2 buck chuck) and then allow to cook for another hour.

If you have a pressure cooker this goes faster, but I kind of enjoy the process of cooking it low and slow. Add to rice or whatever else you want.

All the pros go to Costco and buy Tilapia eggs and tuna, maybe fish processes faster.

For something inexpensive, I used to get a whole pork loin from Sam's Club and smoke it (you could probably do it in your oven if you google it). It came out to less than a dollar for a 4-oz serving, which is pretty good since loin is dense and filling.
Now, however, with bbq (pork butt/shoulder) being so cheap, I've been smoking those (again you could do it in your oven) and it's under a buck for a 4-oz serving of pulled pork bbq. Look up recipes for rubs and then once you pull it, put sauce on it, mix it up and freeze in one baggie for each serving. Same with the loin, cut it up once it cools and freeze in baggies.
Both of these options give me 4-5 weeks of lunch meat for around 20 bucks or so each.
Both of those I put on salads for lunch, very good with salads.

Might buy 2lbs of salmon and try making some type of zucchini noodles.

Good idea, but I'm a noob, only know how to cook chicken/fish in the oven. And that takes too long, I like to keep meal prep under 30 mins - marinating. Beef is too fatty for me right now.
