Dough made from King Arthur flour and a sourdough starter, New Haven Apizza style. Sauced cooked down with double concentrated tomato paste, San Marzanos and a couple of anchovies for good measure. Toppings would be fresh mozzarella slices, parm, soppressata, serrano chilis, fresh basil, salt, and a drizzle of honey and chili-flake infused olive oil.

I prefer the Neapolitan style which is a thin, crispy crust with rounded edges. It’s always hand made and usually cooked at high temps in a wood fire oven. Moderate sauce with dollops of fresh cheese and toppings can range from fresh garlic and basil to homemade sausage, prosciutto, pepperoni just not all of that at once.
