Got a ~20# bird in the fridge right now. Going to spatchcock and dry brine it tonight, then rub it down and throw it on the smoker in the morning. Should be hnnnnnnnng. Never done the spatchcock before but with such a big bird I've heard it's a ton easier.

Cornish game hens in the crockpot for an easy day for me. Will make some rice pilaf, mashed potatoes, and candied yams on the side.
Op’s turkey looking moist AF. Would gobble till I wobble.

Going old school this year.
Brining for about 2 days. Slather the outside in Butter and put in turkey bag (srs). Into the oven. Super moist inside and crispy skin outside. Turkey tends to cook a bit faster too so gotta still keep an eye on it but no basting.
Only thing better is deep fried.

I don’t celebrate thanksgiving. Tomorrow I’ll eat the same thing I always do. They had a little potluck at work today and I sat it out.

wet brine for 36 hours with an apple juice brine...then slow smoke with apple wood and cherry, probably do a maple glaze as well...mashed potatoes, stuffing, roasted sweet potatoes, broccoli, corn...daughter is bringing over pie, ice cream and a cheese cake...oh yeah and plenty of wine!!
