Being a Southern Heatcel Has It's Perks...
Like being able to smoke delicious meat stuffs in December without freezing your bawlz off. Was a balmy ~60⁰ here yesterday so threw a 2 bone rib roast on the cooker. Served with some lightly smoked bell pepper slices and homemade mashed taters topped with caramelized onions...
About to come off the pit -
I did let it rest for 30 minutes prior to slicing, should have gone for an hour, oh well -
