I love making a prime rib roast in a cast iron skillet with a garlic / rosemary / olive oil / salt pepper rub.
Just mince it all up and coat with olive oil and salt / pepper then get some oil really hot sear the roast on all sides and then generously rub in the rosemary / garlic rub. Cook for 275 in the skillet for usually 1.5-2 hours depending on the size. Absolutely unreal.
I make risotto with dungeness crab / chantrelle mushrooms that is pretty insane too basically same process as risotto but add dungeness meat and chantrelles / chantrelle powder.
Home made chicken fingers are super under rated as well, cut up chicken breasts into strips then go flour -> egg -> cornflake crumbs (by far the best coating I've tried) and fry in oil.
I'm not a fancy cook by any means but cook on the boat for the crew all the time, it's a whole different ball game cooking on an oil stove with only 1 hot spot and chit rolling around all the time.
Have some pretty deadly game meat techniques I'll write out tomorrow

Finally. My neighbor has some goats he’s gonna slaughter and will sell me some of the meat. Can’t wait for some good goat recipes
People assume that time is a strict progression of cause to effect, but actually, from a nonlinear, nonsubjective viewpoint, it's more like a big ball of wibbly-wobbly timey-wimey stuff.

Buffalo chicken- Chicken+Franks+instant pot for 20 min high pressure.
Let pressure release naturally for 5 minutes then vent the rest, shred chicken in pot, enjoy on a bun or on celery with some ranch/bleu cheese. Can make into buffalo dip for a party by adding a block of cream cheese and some cheddar and stirring. Throw that in a baking dish and broil for a few min and your good to go.
Chicken Cacciatore- buy a jar of the simmer sauce from Kroger private selection (ded fkn srs) follow instructions and its just so good and easy. They really did a good job on this one boyos.
Roasted Broccoli- Preheat oven to 450, chop broccoli into small pieces like the size of your thumb. Toss in olive oil, salt, pepper and garlic powder. Spread evenly on baking sheet and put in oven until tops start to slightly char.
Pork n Beans- good for fall/cold days. Get a ham bone from honey baked ham (will have a lot of meat on it) toss that, white beans, split peas, or bean of choice into slow cooker with chicken stock and a bullion cube. Let cook for 12 hours, enjoy super flavorful soup with like 0 effort.

Moroccan Chicken Stew
(quick, easy & can be doubled)
1/4 cup all-purpose flour
4 boneless, skinless chicken thighs (about 1 1/2 pounds)
Coarse salt and ground pepper
2 tablespoons olive oil
1 medium onion, diced
1 piece fresh ginger (2 inches long), peeled
1 cinnamon stick
1 can (14 1/2 ounces) reduced-sodium chicken broth
2 medium sweet potatoes (about 1 pound total), peeled and cut into 1-inch chunks
Pinch of saffron, (optional)
2 tablespoons fresh lemon juice
1 cup couscous
Cilantro sprigs, for garnish (optional)
Place flour in a wide, shallow bowl. Season chicken with salt and pepper; dredge in flour, shaking off excess. In a 5-quart Dutch oven or heavy pot, heat oil over medium-high. Add chicken, and cook until browned, 4 to 6 minutes per side; transfer to a plate.
Add onion, ginger, and cinnamon to pot. Cook, stirring occasionally, until onion starts to soften, 2 to 3 minutes. Return chicken to pot. Add broth, sweet potatoes, and, if using, saffron. Bring to a boil; reduce heat, and simmer until chicken is cooked through and sweet potatoes are tender, 10 to 15 minutes. Discard ginger and cinnamon. Stir in lemon juice, and season stew with salt and pepper.
While stew is simmering, prepare couscous according to package instructions. Serve chicken stew with couscous, garnished with cilantro, if desired.

- mushrooms: cut into small pieces
Cooking:
- boil the penne for 10min

- cook chicken in olive oil, add chicken spices, cook on really high heat while your stir a lot, untill the chickie blocks have a gold brown coat.
- add the greens back to to the chicken in the skillet, put on medium heat, add the cream and pesto, and add the penne. Stir and serve when hot (1-2min)

One Pot Swedish Meatball Pasta
1 lb ground beef
½ cup seasoned breadcrumbs
½ finely minced onion or 1 shallot
1 egg
1/2 tsp salt (for meatballs)
1 tsp pepper (for meatballs)
2 tablespoons canola oil
2 cups beef broth
2 cups milk
½ tsp salt (for sauce)
½ tsp pepper (for sauce)
1 tbsp Worcestershire sauce
4 cups egg noodles, dried
1 cup shredded parmesan cheese
½ cup chopped parsley
PREPARATION
In a large bowl, combine the ground beef, breadcrumbs, onion, egg, salt, and pepper, mixing until evenly combined. Heat the canola oil in a pot over medium-high heat. Take about a golf-ball size of the meatball mixture and roll it into balls. Place the meatballs into the pot, cooking for one minute. Flip the meatballs.
Add the beef broth, milk, salt, pepper, and Worcestershire sauce and give it a stir. Bring the liquid to a boil, then add the egg noodles. Stir constantly until the pasta is cooked and the liquid has reduced to a sauce that coats the noodles, about seven to eight minutes. Add the parmesan and the parsley, stirring until the cheese is melted.
Serve!
Mississippi Roast
1 boneless chuck roast or top or bottom round roast, 3 to 4 pounds
2 teaspoons kosher salt, plus more to taste
1 ½ teaspoons freshly ground black pepper, plus more to taste
¼ cup all-purpose flour
3 tablespoons neutral oil, like canola
4 tablespoons unsalted butter
8 to 12 pepperoncini, some liquid
2 tablespoons mayonnaise
2 teaspoons apple cider vinegar
½ teaspoon dried dill
¼ teaspoon sweet paprika (or smoked, if you want a spicier roast)
1 teaspoon buttermilk, optional
Rub salt and pepper on roast, then dust with flour.
Heat the oil in a large sauté pan set over high heat. Brown on all sides, 4 to 5 minutes a side, to create a crust. Remove roast from pan and place it in the bowl of a slow cooker. Add the butter and the pepperoncini to the meat. Put the lid on the slow cooker, and set the machine to low.
As the roast heats, make a ranch dressing. Combine the mayonnaise, vinegar, dill and paprika in a small bowl and whisk to emulsify. Add the buttermilk if using, then whisk again. Remove the lid from the slow cooker and add the dressing. Replace the top and allow to continue cooking, undisturbed, for 6 to 8 hours. Shred the meat with the gravy surrounding it. Serve with roast potatoes or on sandwich rolls.
