Yellowstone or the expanse?

Need a new show to watch. Heard both of these are pretty good. Leaning towards Yellowstone because I’m not a big sci fi Star Trek kinda guy

Haven't seen Yellowstone. Can confirm that the Expanse is a bit of a slow built the first season, strong for a couple, then a weaker one. Last one was pretty good except that it feels like the story didn't move forward as much as in prior seasons.

Expanse is way better but I feel like you won't get the most out of it if you don't have some background or interest in science/engineering
