Herding dogs

Now that we have our farm started and have livestock (cattle and goats, and soon, pigs), I want to invest and train a herding dog. I have little to no experience, but I think this could turn in to a really fun hobby and necessity to the wellbeing of our livestock and us.

Does anyone have experience with them, and if so, what tips can you give me? We live in Texas, where it's hot and humid, so I'm not sure if a particular breed would be best. Most herd dogs are long haired, and it seems that as long as they were acclimated and bred for this region, it should be ok?
