A curry is a sauce based dish which will often contain either meat or pulses of some kind (vegetarian, typically lentils or beans), eaten with rice or some type of flat bread
For a meat curry the sauce will usually be made up primarily of tomato and onions, ginger and garlic with several spices and it will be thinner
For a vegetarian curry the sauce may also be based on the above however the difference being is that the pulses will either partially or completely dissolve into the sauce making it thicker and heartier
for both types of sauces the addition of coconut milk/cream will add another depth of flavour and increase the richness
the most common spices used for curry are cumin, turmeric and chilli powder

pretty simple process, you don't have to marinate the meat that long or at all but it does make a difference
garam masalla powder is a spice blend that is readily available and the most common one used

Indian food is superb, tons of flavor.
Like others said, start with a butter chicken or chicken tikka masala, they're the "chicken fried rice" of indian food. Get naan bread on the side to mop up the hnnng curry (sauce).
Rogan Josh or Vindaloo are good if you want some real heat. One of the best cuisines to go out for/order carryout because it uses tons of spices etc that I don't keep on hand.

I don't like it. The spices have a strange musky smell/taste. Thai curry is the GOAT curry

Look up reviews and find a well rated Indian buffet. You can try a variety of dishes that way and get some idea what you like. There used to be a very good one off of 30 in Arlington that had the best rice pudding and Clay Pit in Addison was great 6 or 7 years ago though I don't remember getting the buffet there.
