Thanksgiving food

Ok, there's a bit less than a week to go for Thanksgiving. Let's hear your favorite food/recipes that make the holiday complete for you.

I'm going to start off with a turkey. Last year we did Thanksgiving at home for the first time. I'd done some basic turkey cooking in the past, both in my oven and in a smoker, but for Thanksgiving I decided to go all out and brine and smoke a turkey. I used my trusty Weber Smokey Mountain I got for Father's Day a few years ago.

It was amazing - best turkey I've ever had. You could taste fruity highlights from the apple juice and oranges in the brine along with added complex flavors from the spices. Planning to do it again this year, if I can find an uninjected turkey. Everything I'm seeing so far is pre-brined and injected with broth.

My only high-end cooking skill is that there isn't much I'm afraid to attempt. I know we have some fantastic cooks, so let's see what you have.

I get way too sloshed to be much involved with the cooking. But I love the smells and I love green bean casserole and noodles especially.

We are hosting this year, most of our family lives too far away so we only have 3 or 4 people coming. Keeping it simple - smoked turkey, stuffing, cheesy potato casserole, green bean casserole, and pecan pie + whatever any guests bring.

Thanksgiving is by far my favorite holiday.....the list of the foods I didn't like would be shorter than listing my favs. The top of that list would probably be ham. Never been a fan.

I've been refreshing my screen non stop looking for kimm4s meat pies but have yet to see it this year.

Must haves - sweet tater casserole, green bean casserole, cranberry sauce.
One of my new favs to have is cornbread stuffing.
Also need corn, peas, something like that. Steamed asparagus with hollandaise fuks.

I love mashed potatoes, sweet potato casserole with marshmallows, stuffing, gravy, corn and rolls! And apple pie for dessert and my pumpkin bars. They are the bomb dot com!

Oh shoot, I didn't expect to be called out by someone who actually knows how to cook, lol. High-end was probably a bad choice of words.

I like to mess around in the kitchen. My wife likes to take a recipe and make the same thing over and over perfecting her execution. I tend to free style a bit more, trying new recipes and modifying ingredients based on my mood. For example, if I do a stir fry, it's probably a one-off creation that will never be repeated.

Honestly though, if I stop and think I can't come up with anything I cook that I would really call hard. Just things that were intimidating the first couple times. The turkey was a bit of work, actually the hardest thing to come up with was a container to brine it in (igloo 5-gallon cooler fit perfectly). Canning is intimidating for some but after a few times it's no big deal - we did pickles for the first time this year. Sourdough is another area that seems to make people nervous, but I do pancakes and bread every Sunday so it's pretty routine.

I make meat pies for Christmas.





I'm hosting a small gathering this year. I'm serving turkey, stuffing, mashed potatoes, gravy, butternut squash, mashed carrots and turnip, cranberry sauce and cornbread. I'm making 2 chocolate pudding pies for dessert.

I'm working on becoming a bit of a squash connoisseur this year. We had a lot of garden space this last summer and planted a bunch of squash. I have literally a pile of butternut, spaghetti, burgess buttercup, delicata, and sweet meat squash. Love it all.

This year I’ll be making both for our family’s Thanksgiving potluck. I just got a second cast iron pie pan so I can make two pies for the occasion. I’ll also be making home made whipped cream as well.

Love stuffing, hadn't heard of cornbread stuffing. One of our traditions is "doctored stuffing." You start with a box of stuffing and then add whatever you think will taste good in it. I love craisins, little pieces of apple, cut up little smokies, etc. We usually brown the turkey liver, mince it and add it, too. Yummy.

My parents have a bunch of apple trees, all different varieties - honeycrisp, Harold Red, sweet sixteen, macintosh, etc. A few years ago, they bought a press to have an easy way to make use of the apples. Every fall we do a little gathering and all go over and press apples for half of a day, filling up jugs to freeze and save for later. Part of the fun is coming up with the different mixes of varieties. This last year, for some reason the apples were all wormy so we didn't get to press our apples. I have a couple jugs saved from the previous year that I'm planning to break out Thanksgiving Day.

I don't think anyone has that much squash that's awesome! I wasn't going to make my pumpkin pie this year but I changed my mind...it just wouldn't be right without it.

Too much. There's actually one more box just outside the picture. I planted a bunch, because some years they don't produce very well. The weather must have been just right this year. We've been eating a lot of squash.

Your pie is looks delicious. I do a pecan pie about every year with just a simple pat-in-pan oil pastry. Mine pies never turn out as pretty as the ones you ladies have posted. I agree though, Thanksgiving doesn't feel quite right without a pumpkin pie. We always have pumpkin, apple (my Dad's favorite), and pecan and then a mix depending on peoples' moods. Usually a chocolate, sometimes banana cream, occasionally a coconut cream or lemon meringue. Last year my wife did triple layer butterscotch that was a hit. Just a basic Jello-O pudding base, but it was easy and delicious - a winning combination.

I usually make some kind of green bean casserole and/or some cornbread. This year I'm going to be making a twice baked sweet potato casserole. I got a recipe from this cookbook I got for Kindle. It's pretty simple as fug but it's delicious and I have had a lot of compliments on it, so....

I've never tasted a dish with that much butter and cream that I didn't love. Looks delicious.
