Thanks! Instead of searing first, and then finishing it an oven, you do the opposite. Low and slow in an oven, and then finish by searing. It reduces your margin of error imo.

Especially if you do the same cut of beef every time. To be really consistent with any cut, use a thermometer. 130f is medium rare, but with my thermometer, 130f is closer to medium so I go with 120-125f before I sear it. Perfect medium rare every time.
