This is it OP. Cast iron finished with basting in butter, thyme (haven't tried with rosemary), and garlic is where it is at. I don't even grill steak anymore after starting to cooking this way. Giving it 9/10 only because I like it a little more rare.

Looks delicious.
The closer we approach the uncertainty of life's ending the more we wish to trade all of the things we have acquired in exchange for all of the things we have lost: wealth for youth, knowledge for fresh curiosity, resignation for hope. We'd trade our wisdom for new experiences, but it is wisdom that will teach us that at the end of the road the only new experience is death.

slightly overcooked for my liking, but I can never turn down a good Ribeye.

For some reason I was expecting the NYC restaurant Butter.

I didn’t notice the fennel. I buy it all the time for my sows but I never myself taken a bite. It smells like licorice and pigs love it. But if I were to eat it I’d need to cook it/10

Delicious! Let's see, red wine vinegar, Aleppo pepper, anchovy, crushed garlic, olive oil, salt and pepper. Felt like a beef version of salty, fatty pork and pickles!
