Poverty just like t bone

People were tricked into believing the gristle, tendons, fat, bones, etc.were good so poverty cuts could be sold like something premium. I only eat things like filet and arrachera


People were also tricked into thinking chit tier poverty prison food (lobster) was high class too, even though it tastes like garbage

A sub par and under seasoned rib roast that was finish cut properly by the butcher. You all need to realize prime rib isn’t steak nor is it cooked like one. It’s cooked in an over setting slowly then sliced into steak. “Prime” refers to the method in which its cooked and isn’t limited strictly to rib roasts, I cook prime sirloin roasts and prime t bone racks a few times a year. I prefer two hours in my smoker over mesquite to get a good smoke rind around the outside that adds so much to the flavor without being over powering. I personally prefer a salt based crust that is largely taken off after cooking and let set with garlic slices inserted. Prime roasts are life changing experience if done right. All of you bashing prime rib ITT are doing absolutely itching flaunting your ignorance on the matter.

Filet mignon is the most overrated overpriced cut. I’d recommend it to geriatrics who have trouble chewing I guess.

rest it for a few hours, you want it to be as close to room temp as possible. when i made i think 8ish pound for thanksgiving i believe i rested it for like 8-10 hours, srs.

coat in non salted butter mixed with garlic, rosemary, and thyme

seared at 475 for i believe 30-45 minutes

take out and reduce heat to something low, like 250-275

Baste with the butter that melted in the cast iron (don't rub with the brush or it will knock the garlic/herbs off, just "pat")

Cover lightly with foil, put back in oven

Baste every 30ish minutes.

take out when it's done. I'd say an internal temp of 135, or 145 at the highest. you can play around with that though and figure it out as you go along and multiple attempts. Just take notes to remember.

It takes a very long time to cook, depending on size.

oh yea, and when you buy it, you want the bones still attached, just tied with string to the meat. the bones is the resting rack.

you cut the string off after it's all cooked. tear off the bones, they are ribs, and good. Then you just slice the roast as you serve.

I never understood the appeal of prime rib that needs au jus to be good. Just get a steak. Bone in rib eye is the best steak btw.

I make one of those garlic herb crusted primes for the family every Christmas, but I always think to myself how much better off it would be if I just sliced that bitch up into some ribeyes and stocked up on steaks.
