Is this really how to bb row?

Ive always done it with my back close to parallel to the floor, overhand grip or slightly rotated if I'm using an EZ bar. Never had issues with shoulder impingement from doing overhand grip. Seems like the way he's demonstrating you're doing a modified shrug with bicep activation.

Parallel to the floor is considered a Pendlay Row I think. I usually do those too, but sometimes I'll switch to this more trad row positon to flex on the plebs because it makes it like 35.0% easier than parallel.

mind blown I always thought pendlay rows were where you kind of "jerk" the bar up a little with hip pivoting. Basically a safer way of cheat rowing.
where the fuk did you hear that?
I don't know

Parallel to the ground is usually done with pendalay rows. I usually set up for my bb rows by standing straight up and then hinging my hips by pushing my butt back which gets me into position

Does underhand hit a different part of the back than overhand?

I do supinated grip on shoulder day, and do high rep low weight (no more than one plate). Seems like it really engages my rear delts and looks alpha as phuck.

I've seen people on YT set the weight down on the floor or the low deadlift pins between reps, but I find the stretch and time-under-tension to be way better if the bar remains dynamic.
