Lost 30 lbs. Kept it off
Back pain gone.

All joint pain gone. I play competitive sports. I can notice the improvement in my agility and explosiveness.

Did you have any indications or symptoms that clued you in that you should try it or went ahead with it on a whim?
Currently I don’t get any spikes of typical gluten symptoms (bloating) or any problems for that matter when I eat pizza/pasta.

the vast majority of people who see benefits from a "gluten free diet" are just eliminating the ****ty food they were eating and for the first time truly being conscious of their diet and realizing how bad they were eating. They blame it on the gluten because its easier then saying "yeah i was just being a fast careless piece of lard"
so if that is what you are looking to do then yes gluten free is the way to go

Start with just cutting out pre packaged food. I dont mean grind your own wheat for bread like some hippie.
just start eating regular meals and sensible snacks like fruit and such.
This alone will give you a huge benefit. Then if you want to do something more drastic then give it a try. Worst case just go back to your regular home cooked meals.
Eat like grandpa did back in the day. Just that simple.

Gluten free diet is from people with celiac disease. My son has it and none of his food Can touch areas where gluten has been. Its a real disease with serious health complications involved that go beyond «i feel bloated when i eat Pasta».
If you arent allergic to gluten what is eliminating it gonna achieve?
Eliminate foods that give you bloat.
If you think gluten is causing it take a test. If you do have celiac your diet has to change for life.

I have neither, and apparently gluten has a lot of important nutrients.
