Grammer Bro's needed

The first sentence bellow is correct, but why isn't 'yelped' capitalized? I got taught that a capital letter follows a full stop, exclamation mark, etc.

"There’s a spider on my arm!” yelped Jeremy.
rather than
"There’s a spider on my arm!” Yelped Jeremy.

The former looks better visually, and has a better flow to it for reading, for me anyway, but the rules of it aren't clear in my head.

Why is the former correct and the latter wrong?

Or are they both right?

A quote isn’t a full stop, exclamation, or etc. so I’m not sure where the confusion is coming from?

There is no rule that a capital letter follows a full stop or anything like that. The rule is that the first word of a sentence is capitalized. In this case, we are not starting a new sentence, so no need to capitalize "yelp."
