I mean sounds reasonable but there are some pretty jacked construction workers out there.
I think more demands on your body means more changes your body has to make in order to keep the same or better performance.
So I'm not sure if a less strenuous job would make you less jacked or more jacked, and vice versa.

imo no
if you're sitting in your office for say 8 hours a day, you tend to develop certain imbalances and weaknesses in your muscles. it can be hard to correct 30+ hours of sitting down with say 4 hours a week of lifting. also less blood flow = less recovery
using your muscles, even if it is for something simple like walking ensures that there is little idle time and that your muscles are being used. but not in a way that impacts recovery or leads to over use. not to mention an active job helps burn more calories so you are able to eat more, get more protein, etc. the body eventually adapts to the demands of physical labour. not to mention alot of physical labour jobs train things like your forearms, grip strength, hands, calves, etc in a way that is hard to mimic in the gym. Those smaller muscles tend to grow with lesser weight but constant and more prolonged activation rather than 4 sets of 20 2x a week.
i think farmboy strength is an actual thing, it's always guys like construction workers, movers, farmers, etc with the most jacked forearms
