I’ve given up fresh vegetables…
Frozen veg only now. Mixed frozen veg and bags of peas.
My veg intake has gone up a lot of much easier to prepare.
No more rancid, rotting vegetables at the back on my fridge.

I don't blame you. I mostly gave up on fresh vegetables and most fruits.

As far as the discussion goes, I considered the entire thread hyperpole on some level. I've bought more fresh veggies and fruits than probably every coworker I have combined within my immediate work area. Often pay premiums getting the chit in tubs that's pre-prepped and ready to eat, zero fukkks given because it's better than letting the chit rot in the fridge unused by a mile.

But as far as cooking them and then freezing them for longer term keeping goes... why bother? I can buy steamer frozen veggie bags for like a dollar apiece or something, and save potentially hours of hassle and bs in the process, so it's not exactly a luxury item. And they just turn out so much better than any other veggies aside from eating them good and fresh.
Also, aren't veggies notorious for losing nutrients when they are cooked, the more cooking the worsr the effect? I always thought that was the most classic, ultimate arguement in favor of buying fresh vegetables. Not that it scares me off from cooking veggies ever, but it seems to me like properly cooking them and freezing to later re-heat would defeat the purpose when you can buy frozen steamer bags of them pretty cheap.

And veggies lose nutrients when stored for too long. In that way frozen retains more than say a purple potato which is normally crazy with antioxidants will lose it all by December. But frozen when fresh preserve longer.
And while fresh veggies may have more nutrients, bioavailability of the nutrients may vary.
Carotene from carrots for instance is more bio available when the carrot is lightly blanched in boiling water.

I buy fresh veggies about once a week. Green beans, yellow squash, zucchini, carrots, broccoli. Cut them up, put them raw in good containers in fridge and they last at least a week. I roast them in the air fryer fresh every day.

I'm sick of buying fruit and it turning out to be sh!t. The only fruit you can get consistency with is apples. Where I live they only sell grapes or blueberries in packaging so there's no real way of testing the fruit before you buy it, and it becomes a roulette of hoping not to get something that's sh!t tier, the fruit being too soft is usually the worst culprit. At least the packaged sandwiches are usually of similar quality, fruit is hit and miss as fukk

I got this way years ago. I like to shop sometimes for 2 weeks or a month at a time. Potatoes, onions, carrots, turnips are about vegetables I bother with fresh and the rest is frozen.
