Not to spoil the fun here, but I was of the understanding that eating charred material is a prime way to get cancer. Just because something looks blackened doesn't necessarily mean that it's charred, but...

Bark on smoked meats /=/ charred. Char is when things get burnt, typically when cooking over direct flame, and has a very acrid/bitter flavor. A great bark like this is a combination of the rub you use plus time and exposure to smoke.

There is also good smoke and bad smoke. You ever had bitter "oversmoked" meat? That's because it was cooked with a dirty fire, not because it was smoked too long. A proper cooking fire will produce almost completely clear smoke with just the slightest tint of blue. Thick white/gray smoke produces creosote which is the nasty chit that gives you cancer.

I can cook a brisket or pork butt for 8-10 hours and it will not have any of those off-putting flavors, but you can throw one in a pit with a dirty enough fire for 15-30 minutes then finish it in an oven and it will have that nasty taste that people associate with being oversmoked.

I absolutely detest steak, to begin with. The only Red Meat I have eaten for about the last 20 years is Pepperoni on Pizza, as well as Sausage on Red Baron Supreme Pizzas. I cannot eat even a patty-sized portion of any meat that is neither fish nor fowl without getting sick.

As for78novacaine's comments, that's why I added the 2nd sentence in my first post in the thread. I would have been more thorough/articulate, but that shows how much into meat-eating that I'm NOT. 95+% of the meat I've eaten the last 20 years has been chicken, so I wouldn't know these things.
