Rate my cut of meat for Christmas

8lb Bone In Angus Ribeye. I am salting it now to sit in the fridge until Christmas morning. I will be making prime rib.

^^ 500 15m, 450 15 then 300 for how long until my meater (bT thermometer) reads 120. Then resting it will take it to around 130.

I screwed up a ton of prime ribs in the beginning before I got them right. Although even the screwed up ones were either over cooked but still tender, undercooked but still tender and grilled after fixes that, uneven cook (the easiest to fuk up) but still tender. So if I screwed them up it was meals for a few days.

on level of importance: cut, time to come to room temperature (this is critical for a even cook), thermometer, oven placement, everything else.

For the holidays I rub it with a ton of softened butter, 2-3 whole bulbs of roasted garlic and pepper. No salt because I dry brine for 1-2 days.
