Had some friends in from out of state this weekend and treated them to some Texas goodies. Brisket and Dino ribs Saturday, USDA prime tomahawk ribeye for dinner tonight. Hnnnnnnnnghhhhhhhh

I do, but only as an occasional treat. They are exceptionally rich so it's not something you would want to eat all the time. Think the best fatty brisket you ever had then add 50% on the richness scale. They will absolutely melt in your mouth if cooked properly.

These are not the beef back ribs you typically see that are just the scraps leftover after cutting out boneless ribeyes. They are usually labeled as plate ribs or dino ribs. Short ribs come from the same part of the animal but usually come cut in smaller chunks vs the entire rack (plate).
