Cast Iron

Are cast iron pans hard to maintain? Anyone use cast iron? I was looking at cooks on the internet making burgers, and the cast iron seems like the tool of choice. Do they rust easily?

Super easy to maintain.

They rust if you're an idiot. Never wash it with soap and water.

To clean a cast iron, you just need hot water a scrubbing brush and reapply a coat of oil after hand drying.

I bought a cast iron skillet, never used it and then let it rust away inside the trunk of 1994 Pontiac Grand Prix (that wasn't running).

This is an old wives' tale. You can wash them with soap and water. It won't ruin anything. Just dry it right away.

I wash mine with soap & water all the time...never noticed a difference...granted I do this with a cold pan and cold water.

Kosher salt is also good for scrubbing

They are annoying to maintain. I only use mine for cooking over a campfire or my fire pit, or if I'm making something that specifically calls for it.

I mostly grill steaks so I don't really need it for searing

SUPER easy to maintain if you know what you are doing(hint i just wipe with a paper towel) I use cast iron for most of my cooking and a cast iron dutch oven for camping. The key is seasoning it right (linseed/flax oil) at the start, and then leaving the seasoning on and not scrubbing the seasoning off or soaking.

So fun fact for the stupid: Rust occurs naturally very slowly. The overwhelming amount of times you see rust on metal on Earth, it is due to bacteria that oxidize the iron. That's why moisture exacerbates rusting. So, if you just scrub your pan with soap and water and then salt it and dry it thoroughly, it will stay relatively unrusted. Seasoning involves a polymerized oil coating that won't come off with a gentle soap and water scrub. It would need to be scraped off.

Everyone who tells you otherwise is a retard and hasn't even bothered to look into the science of what is going on. Try it if you don't believe me.

Worth learning to use - once you have a good seasoning on it, cleanup is easy. Just need to remember to give it time to heat up evenly. For cleaning tips, had the best luck following Kent Rollins suggestions - has several videos on this -https://www.youtube.com/watch?v=3yVIvcFWoRc
