Self taught, been at it for 25 years now. Made goat cheese chicken pasta last night with rosemary and tomatoes. Also made homemade pancakes and sausage links (wife's request) for breakfast and a chipotle chicken torta for lunch.

lol Sunday dinners are always a cheat, but we do low carb the rest of the week. The pancakes were special for her. Actually, I haven't done pancakes for breakfast in years. I prefer over medium eggs/bacon.

Here are a ton of avenues, op. If you're like me and started cooking later in life (used to live off takeout and heat n serve chit for too long) then culinary school might be out of the question. Plenty you can learn in your own, though.

I subscribe to a lot of cooking channels on YouTube like Epicurious, Helen Rennie, Babish Culinary Universe, etc. Epicurious has a series called 4 levels where they showcase and dissect how cooks of 3 levels (plus a food scientist) make a certain dish. They go into why certain techniques are better than others, certain types of cheese work better for Mac n cheese, and so on

I also went on discount mags dot com and picked up some cooking magazines for crazy cheap, from there I picked up some cookbooks like The New Cooking School (America's Test Kitchen) and another good one is Salt, Fat, Acid, Heat. They break down what's good to use, what works and why it all works. America's Test Kitchen has a bunch of thick textbooks on cooking if you want to check them out

But I have to say it took a long time for me to find everything I was looking for; getting better at cooking is obviously a process and takes time

I only have about 30 recipes from my mother and was seeing how others got to theirs..

I like America's Test Kitchen and I follow a few YT cooking channels for inspiration.

I microwave potatoes about once a week. Too hot to bake.

I have this cloth bag thing that my mother got me. Clean the potatoes > in the bag > in the microwave > 2 or 3 minutes > flip and cook 2 or 3 minutes more. Really just depends on the size of the potato.

For mostly big/heavy family type stuff check Bree/Pioneer Woman. I like The Homesick Texan for tex mex/Texas home cooking. Pro Home Cooks on YT does a lot of different varieties of ethnic foods and also food prep/quick meals.

Real cooking shows, the first being Emeril Live

then got into Mario Batali and then Julia Child: Cooking with Master Chefs

the Julia Child episodes are nuts, you see young Emeril, Lidia bastianich, jacques Pepin, etc

Worked in a bunch of restaurants growing up.

As for recipes I took some from places I worked, some off the TV, but most stuff I learned from YouTube.

When I was a kid I use to stay watching cooking shows like: Julia Childs, Yan Can Cook, Grillin' and Chillin'.

I got a little older and it was Emril, Paula Deen, Jaque Pepin, Alton Brown.

Then Giada, Rachel Ray of course Gordon Ramsay, Mario Battali, Bobby Flay etc. etc
The billionaire and the beggar both have 24 hours in a day.

That's why grandma's apple pie rocks and yours sucks.

I'm definitely no chef like Chef-Brah ITT, but it's not rocket science either. Took me a long time to realize that blasting meat on the grill wasn't the best way to get the best results, though.

Self-taught. Started off just following recipes that I came across or that my ex requested I make for dinner. Eventually, you become familiar enough with techniques like braising, roasting, etc., that you can come up with your own recipes using those techniques and make a bunch of variations based on what you're in the mood for and what's in season. Once you've followed a recipe a few times, it's not difficult to start making a dish from memory, without measuring things, and so on. It's hard for me to understand people who say they can't cook, that their food comes out disgusting, they burn everything, or whatever. Just pay attention to what you're doing and develop your sense of what flavors do and don't pair well.

I don't watch a lot of TV, but sometimes I'll have the Food Network on in the background and will get ideas (like for interesting ingredients to seek out or dishes to try making) from things I see people do on Chopped, Beat Bobby Flay, or in a restaurant featured on DD&D.

Also, I have a Masterclass subscription. During COVID lockdowns I did a couple of Thomas Keller's courses on that site. It was cool to learn from such a master/perfectionist and see how top-end restaurants put so much effort into even the simplest things like making stock.

Also, I occasionally check out the Serious Eats "Food Lab" section of their website, as they will run tests comparing different techniques for making the same thing, including a particular ingredient or not including it if there is disagreement about it, etc., and then tell you the results so you know what's likely the best way to do whatever it is.

Figured it out as I went along.

Its not like its really hard.

The main thing for men to learn is that not everything is cooked on high. Once you realize that medium is a setting on the stove the cooking becomes easier.

Also using spices. Nothing fancy, just some good old fashioned lowrys, pepper, garlic powder. Works in everything.

I've never really understood how people can't "cook".
You either following directions from a recipe or just imagine what you want and try different ingredients or measurements. It's really not that hard

It's not hard to just plainly "cook", but to have a wide range of skills and knowledge and to be able to create things that are legitimately good and complex is a little different. Not just following recipes, but knowing enough to adjust them to your liking or for better balance just by reading them.

Having been into food for 25 years and as a person who loves to talk food/restaurants I find that most people don't know wtf they're talking about even when they say they can cook. They think Olive Garden is good Italian.
