Got up early this morning and meal prepped these pork tenderloins on the RecTec. Rubbed with a little Spicy Dan O’s and some Boars Night Out.

Rolled smoke on them for an hour at 225 then cranked it to 400 till then hit 145 internal.

Mashed sweet potatoes and some roasted garlicky asparagus.

BONUS: made a double batch of beanless chili for the wife’s lunches.

Not sure about the chili. I might like it without beans. I hate beans.

I did two lbs of beef, then we have one of those vegetable choppers where you slap the lid to force them thru a sharp grid - I sliced three bell peppers and two red onions on the smallest insert so they’re like less than 1/4” on each side - we call it “confetti” and it works out awesome bc you get some in every bite.

Then two cans each of crushed tomatoes, diced tomatoes and RoTel, with cumin, chili powder, garlic and oregano (I don’t measure spices most of the time).

What’s wrong with beans? Cheap, nutritious, high in fiber… black beans with Tex mex egg type dishes for breakfast is hnnnng and keeps you full forever
