I've been to some pretty remote places and ate whatever was available, many times having no idea what I was eating.

100% chance I've eaten a rat or something similar.

Rabbit - not gamey at all, but wouldn't say it tastes like chicken tho

Sea turtle - really fishy, and not in a good way. Tastes like merganser, if you've ever had that misfortune.
Giant clams - like eating salty shoe leather. Super tough.
gator - tastes like chicken, but tougher
squirrel - texture is like chicken, but flavor is more like venison
frog legs - like mushy chicken
