2 questions (food + job)

Q1:

Is frying on 2 tablespoons on Grapeseed oil bad for you? (Ground beef) or should I remove all fried food from my diet? Am trying to lose weight.

Q2:

I'll be moving to Poland in a year or two(where I was born), would I be better off getting job at a Polish office OR get a job in IT? (I would be doing IT in Poland)
