Kim and Red inspired dinner and baked goods thread.
I’ve been trying new recipes recently and perfecting some old ones.
Whipped Shortbread Cookies. These were delicious, so light and airy.

Way too many goofy steps were included in this recipe. I just did my own things after the first batch.



Peanut Butter Blossoms. Meh…I have a way better peanut butter cookie recipe. These were very crumby

Chocolate chips scones with orange extract. The best scones I’ve ever eaten-no bull****. I took the time to cut the chilled butter into the flour hnnngggg. These are going to be my last meal if I ever end up on death row.

“Restaurant style” Mexican rice.
So flavorful and fluffy.

Toast rice in several table spoons olive oil (If you don’t use enough oil the rice tastes scorched)

Add the rest of the seasoning when the rice is about 3/4 toasted

Toast throughly. Add water, cover immediately, cook 20 minutes. Do not lift the lid.

Remove lid, barely fluff, then immediately flip out into a larger bowl.

This is quick recipe I throw together with what I have on hand.
A better recipe is to sautée Roma tomatos, Hatch chilies, onions, garlic. Blend together until smooth then add to toasted rice. Instead of tomato paste and salas or picate sauce. Either way I found that adding some grape or cherry tomatoes to the rice while toasting really adds a great flavor layer.
What’s important.
-Use at least several tablespoons of oil
-Throughly toast rice
-No peeking
-Fluff slightly then immediately flip out into a large bowl

Chicken piccata. Delicious. I’ll be eating this at least once a week.



Next time I’ll add more parsley and garlic in the flour and tenderize the chicken cutlets. Everything else was 10/10
