I've been talking to a girl who is Muslim, and in general has more traditional values/views but she must not be extremist since I'm pretty sure Muslim women aren't allowed to be with non Muslims yet she is open to it. Though she would make me wait for sex until marriage which is an obvious downside, but curious what other issues could arise?

Depending on her family, you need to be a Muslim. Muslim women cannot marry non Muslim men, in the context of religion. People don't necessarily follow this though.

she's probably a very liberal Muslim if she is talking to you. Muslim women aren't supposed to marry non-muslim men. Honestly if she's doing that might be even open to sex before marriage. If they are a more conservative family. They definitely won't accept you and might even make your life hell. Then she would want her kids to be raised muslim. What if someday she has an epiphany and decides to become more practicing and realizes her relationship with you is basically one big mistake? At this point, she will either try and get you to convert, leave you, or live with the cognitive dissonance of it all while trying to rationalize being a practicing muslim.

Also in muslim communities, the woman needs a guardian to approve of the marriage. I can't imagine anybody doing so. You can still get married legally but religiously technically she isn't married.

A truly conservative muslim woman that would make an obedient wife won't do this stuff. But strange things have happened. A liberal muslim woman are kinda westernized, but still hold some values they had from growing up. But they can be full blown feminists as well. Maybe even worse than feminists because their upbringing was the man provides for them fully. So they might expect that while still having her feminist sensitivities.
