Rate yesterdays lunch

I was craving roasted chicken. So I roasted some chicken.

Made some broccoli, a bernaise sauce (which I thickened later on), cranberry sauce, a pan sauce, and then I also made some crispy potatoes when I ate it again for dinner

Plus shortbread cookies. So buttery and delicious





For dinner, I made potatoes to go with it and the pan sauce. Didn’t plate the chicken on the sauce yet because I was waiting…



I also finally ordered my boxing shoes. Can’t wait until they come. Wooooot! Bought them from a different website but just using this image I found.

Thank you! I dry brined for 14hrs prior so it was super juicy and soft.
If you’d like to try it yourself, what I do is 1tbsp kosher salt+1tsp sugar+1/4tsp baking powder for every 5lbs of bird (turkey or chicken. A bird is a bird is a bird).
Brine 1hr/lbs. Then cook at 350 20min/lbs plus 15ish minutes to an internal temperature of 165. It’s perfect and easy!

Thank you! I gave my cooking tip for birds in a quote above if you want to try it too! Dry brining makes a huge difference, along with the sugar and baking powder addition.

Plus there’s a way I specifically roast it if you want me to get into the details of that too!

This with the dried. This chicken was so juicy and moist. I didn’t know about close to expired chicken though—that’s disappointing to hear.

Creamy mushroom sauce sounds so good! Dont be afraid to try different herbs and spices too! I did paprika, garlic, parsley, lemon, sage so nothing too crazy. Next time I’d definitely experiment with garlic ginger and lemon grass and Thai chili peppers for a fresher Asian twist.

I usually pan sear and butter baste my steaks, or reverse sear. Grill in the summer. What about you?
