Pretty good cook honestly for a skillet. Crust looks pretty solid, and it's Med rare/Med all the way through the middle, very nice.

I prefer cast iron as well however I was seasoning them in the oven at the same time. I like my stainless, All Clad makes good ones.

I never time it. I just take a look or do the quick squeeze to make sure it’s medium rare. I use a Meater for large preparations like Prime Rib.
