If anything this seems like a strong reason for Russia to abandon restraint in their handling of Ukraine. If everyone is dead who is the debt repayable to exactly?

Tangible goods do not drop to zero value unless they have no utility and no demand. Yes, if Russia were occupied [haven't seen any evidence to support this] or somehow forced to pay restitution [who will force them to do this and how will they do it?] that would be a larger problem.

If the world was willing to go to nukes over Ukraine then wouldn't it follow that actual armed troops from NATO countries would be in Ukraine batting against Russia?

Again this. Sanctions hurt poor people and not just the poor people living in Russia. Perhaps if Russia were not a net exporter supplying petroleum products and grain to multiple countries then sanctions would fall mainly on the people of Russia and could act as a lever to cause the people to turn against the government.

Instead Russia is a net exporter. There is demand for their goods which will be unmet if they are removed from the market causing prices to spikewhich harms poor people the most, not Russian oligarchs.
