How do we know this place is No. 1 and not just top 15?

Can someone explain to me what the "experience" of eating in a nice restaurant is? I keep seeing people posting that here. Maybe the food is good? Okay, that's not experience, that's good food. Is it the lighting? The people eating? I'm guessing they're 90% tourists. What's this experience? I'm genuinely curious.

The ones I have been too were extremely small venues by most people's standards. The one I'm going to is only 12 tables. The last one I went to was 14.
You can expect a well appointed decor if you get into that sort of thing. They usually give you a tour of the kitchen if you ask. The kitchen is hospital clean.
Each course they bring out is served on a unique dish
The food is unlike anything else you'll have. You can obviously expect some exotic ingredients. You'll get a lot of seemingly odd combinations and unique preparations. Presentation is always going to be perfect. You're not just getting a really expensive steak and potatoes. All the ones I have been to were tasting menus. You can expect a dozen or so small plates served in a progression
You're a military guy. Attention to detail is the phrase that's going to describe experience for you. Imagine that applied to a restaurant and done perfectly

I never understood this kind of restaurant. The food is no better than many places which are 1/4th the price, and the whole thing just looks ostentatious. Let's be serious here, all wine is the same, there are peer reviewed studies that can attest to this, and the pretentiousness of the plating is just cringe inducing. It's a cheap simulacrum of decadence and opulence.
I of course say this as someone married to a chef who has worked at 3 Michelin star rated restaurants.

When it comes your time to die, be not like those whose hearts are filled with the fear of death, so that when their time comes they weep and pray for a little more time to live their lives over again in a different way. Sing your death song and die like a hero going home.

I don't have a great ear for music but I can appreciate talent. I'm not simple enough to say that Beethoven was good but I think that Miley Cyrus is good too. Does that mean that I can't enjoy Miley for what it is? No but I can recognize the difference
